Appalachian Gap Drumlin Champlain Rye
Appalachian Gap Distillery starts with a mash of 100% rye — no barley, no other grains — which is a little extra work but results in stronger, more vibrant flavor. Double distilled, it is then aged in new American oak barrels for at least three years. They make just a dozen barrels a year.
Nose: Citrus, raisins, caramel, spice, a hint of vanilla.
Palate: Hints of toffee, notes of dark fruit, stone fruit, pepper, rye bread, spices and cinnamon. Quite a bit of heat from the high proof, but it is a clean heat. Finish is fruity and earthy with a hint of smoke, and a lingering and smooth finish.
