Elysian Fields Lavender Gin

Colored naturally with butterfly pea flower, our Elysian Fields Lavender has a magical color changing property when it's mixed with citrus. It’s made with local Long Island lavender and honey.

Flavor profile: prevalent and pleasant lavender across the palette, citrus on the front, spice on the back, and honey on the tail end to smooth it all out.

Traditional gin botanicals provide the foundation for the lavender and honey notes, and combined with the beautiful color of butterfly pea flower, this spirit appeals to all the senses.

The lavender note is prevalent and present, and offers a unique alternative in most traditional gin cocktails. With the booming at-home cocktail trend, this gin allows people to make cocktails on their own that look and taste like bar quality cocktails no matter what their experience with cocktail making is.

Bimini Coconut Gin

As with each of the other line extensions, it starts with the original Bimini Gin.

The coconut flavor is introduced to the original gin without the use of any flavor extracts. Instead, they use organic Fair Trade Certified Extra Virgin coconut oil in a process know as â€ufat washing.” The oil is heated to a liquid state and combined with their original gin to infuse it with pure coconut flavor. After the infusion has completed, the mixture is chilled until the oils solidify and can be strained back out. The result is a subtle, natural coconut aroma and flavor in perfect harmony with their other botanicals.

Bimini Gin

A unique, modern American gin specially formulated with a softer juniper flavor. Bimini Gin earned a Double Gold Medal at the 2017 San Francisco World Spirits Competition and was awarded 93 points by Wine Enthusiast. Inspired by summertime on the coast, bottled to make it last all year, Bimini is a modern gin with crisp, refreshing flavors and a clean, smooth finish. Fruity and floral juniper is assertive upfront, but a non-traditional distillation process minimizes the resinous pine notes on the finish. Combining this softer juniper flavor with bright citrus notes from grapefruit, hops, and coriander, Bimini Gin is formulated to be both distinct and approachable. Sweet herbaceous Tulsi Basil balances perfectly with the floral aromatics of the Maine Beach Rose in this distinctly light + tangy American Gin. Our rugosa roses are responsibly hand-foraged from islands and coast of Maine, then distilled together with 13 other vibrant citrus + garden flora for a wildly crafted drinking experience.

History
Acadia Gin was inspired by the wild juniper and blueberries that line the coast of Acadia National Park in Maine. Co-Founders Jackson and Zack are from Mount Dessert Island, and this spirit captures the essence of summers they enjoyed growing up on the island.

How it’s made
Acadia Gin is first crafted using a blend of Juniper, orris root, coriander, lemongrass, lavender, and eucalyptus. Sound familiar? These are most of the same botanicals found in our flagship Gin. The difference is that we dial back the amount of lavender and eucalyptus used, and creating a less floral result. We also add orris root to help bring out the blueberry notes. We then soak wild Maine blueberries into the gin for 10 days, remove the blueberries and proof the spirit. Voila, Acadia Gin is here!

The wild Maine blueberries used to make Summer Gin are sourced from Blue Sky Produce, who pick their blueberries from 8 different small growers around Maine. As Blue Sky quotes, “supporting small growers enables them to stay in business and to continue being good stewards of their land.”

Why is there sediment in my bottle?
We do not chill-filter any of our spirits. This means they have the full flavor and mouthfeel of their class. As a result, Acadia Gin will occasionally exude a cloudy or hazy appearance, or sediment may be visible. Have no fear, this is completely natural.

Collective Arts Lavender and Juniper Gin

Sipped neat or with ice the Lavender & Juniper gin is a beautiful deep blue; add a splash of acid such as tonic or lemon and it changes to bright pink. Heather, lavender and camomile add to the magic by playing off the citrusy bergamot and sweet almond, finishing surprisingly dry on the palate.
