Corsair Barreled American Gin

Barrel aged gin has become increasingly popular with Corsair leading revival of this style of Gin. We distill in small batches using a vapor basket system instead of boiling/maceration common in other gins. A vapor system allows a truer flavor to come through because botanicals go through an extraction process rather than a cooking process. We then rest it in our used spiced rum barrels to impart vanilla, fall spice notes and wood to the finished product.
