Bimini Overproof Gin

Bimini Overproof has more flavor than regular Bimini Gin because none of the botancial oils are filtered out. Why is regular Bimini Gin filtered? Oils dissolve in alcohol, but they separate from water. When we dilute the original Bimini Gin to 94 proof, the botanical oils begin to fall out of solution making the gin appear cloudy. We didn’t think the world was ready to buy a bottle of cloudy gin, so we filtered out just enough oil to keep regular Bimini Gin clear at room temp. 

At 111 proof, Bimini Overproof stays crystal clear at room temp with no filtration necessary. This means every drop of flavor we’ve extracted from our botanicals goes into the bottle. 

Filtration removes more of some botanical oils than others, which means Bimini Overproof has a different balance of flavors than regular Bimini Gin. In particular, the juniper is more robust upfront and the hops more clearly defined in the middle palate.

Bimini Barrel Reserve No. 1

The gin is barreled at full distillation strength (180 proof) for three months in three different kinds of twice-used barrels: Ex-bourbon Apple Brandy, Ex-bourbon Rum, Ex-bourbon Sea Salt. The results are blended and diluted to 101 proof and rested in stainless steel for six weeks before bottling. 

Without the heavy oak and char qualities of new barrels, the familiar botanical notes of Bimini Gin are enhanced rather than overshadowed. The citrusy notes of hops and grapefruit are intensified with hints of salinity. The juniper upfront mingles with tree fruit in the middle palate and then subsides into a lingering caramel and vanilla finish.

Bimini Coconut Gin

As with each of the other line extensions, it starts with the original Bimini Gin.

The coconut flavor is introduced to the original gin without the use of any flavor extracts. Instead, they use organic Fair Trade Certified Extra Virgin coconut oil in a process know as â€ufat washing.” The oil is heated to a liquid state and combined with their original gin to infuse it with pure coconut flavor. After the infusion has completed, the mixture is chilled until the oils solidify and can be strained back out. The result is a subtle, natural coconut aroma and flavor in perfect harmony with their other botanicals.

Bimini Gin earned a Double Gold Medal at the 2017 San Francisco World Spirits Competition and was awarded 93 points by Wine Enthusiast. Inspired by summertime on the coast, bottled to make it last all year, Bimini is a modern gin with crisp, refreshing flavors and a clean, smooth finish. Fruity and floral juniper is assertive upfront, but a non-traditional distillation process minimizes the resinous pine notes on the finish. Combining this softer juniper flavor with bright citrus notes from grapefruit, hops, and coriander, Bimini Gin is formulated to be both distinct and approachable. History
Acadia Gin was inspired by the wild juniper and blueberries that line the coast of Acadia National Park in Maine. Co-Founders Jackson and Zack are from Mount Dessert Island, and this spirit captures the essence of summers they enjoyed growing up on the island.

How it’s made
Acadia Gin is first crafted using a blend of Juniper, orris root, coriander, lemongrass, lavender, and eucalyptus. Sound familiar? These are most of the same botanicals found in our flagship Gin. The difference is that we dial back the amount of lavender and eucalyptus used, and creating a less floral result. We also add orris root to help bring out the blueberry notes. We then soak wild Maine blueberries into the gin for 10 days, remove the blueberries and proof the spirit. Voila, Acadia Gin is here!

The wild Maine blueberries used to make Summer Gin are sourced from Blue Sky Produce, who pick their blueberries from 8 different small growers around Maine. As Blue Sky quotes, “supporting small growers enables them to stay in business and to continue being good stewards of their land.”

Why is there sediment in my bottle?
We do not chill-filter any of our spirits. This means they have the full flavor and mouthfeel of their class. As a result, Acadia Gin will occasionally exude a cloudy or hazy appearance, or sediment may be visible. Have no fear, this is completely natural.

Principle De Los Apostoles Mate Gin

Wildly different from the classic winter flavors of the classic London Dry Gin, Principe de los Apostoles Mate Gin offers a unique tropical and warm flavor profile. Crafted with yerba mate, a traditional Argentinian botanical from the Misiones region, this gin honors the centuries-long tradition of Guaraní people harvesting the native plant., each botanical, including pink grapefruit, coriander, and eucalyptus, are macerated separately for 24 hours in a wheat alcohol base in stainless steel containers. Only the peppermint is left to macerate for just 2 hours. The blend is then distilled in small, German copper stills in the Sol do Los Andes gin and grappa distillery in Mendoza, Argentina. A velvety, smooth and creamy gin with flavors of chocolate and fresh herbs, it's bold enough to stand up beautifully in a cocktail like Negroni.


Tasting Notes

Spicy and herbal nose with coriander, eucalyptus and mint aromas. The palate is warm, velvety and oily with chocolate flavors, eucalyptus and peppermint prevailing. The finish is long, cool, and minty.

New England Distilling Ingenium Dry Gin

Ingenium (in·gē·ne·əm) n. the engine of natural creativity that comes from observation and imagination.

Ingenium is a Genever styled gin, distilled from a mash of local barley and rye in our direct fired pot stills.  Pot distillation retains the flavors of the grain giving Ingenium a mouthfeel reminiscent of whiskey.  The botanicals are a blend of traditional and non traditional gin botanicals, including kaffir lime leaf, rose flower and lemongrass.  The combination of which creates a nicely balanced, citrusy, herbal gin with a very smooth finish.

Portofino Dry Gin

Portofino Dry Gin’s initial notes are from fresh lemon and crisp juniper that transport us to the hills of Portofino. They give way to a universe of Mediterranean flavors: from the rosemary and lavender perfumes of the coastal scrub to the sweet and delicate notes of marjoram and sage that evoke the taste of traditional Ligurian cousine.

Their botanicals are grown nestled on the Ligurian coast, the region’s unique micro climate that allows for a lush Mediterranean vegetation to grow all year-round. Lemons, lavender, rosemary, marjoram, sage, iris and rose are organically grown and combined with locally handpicked ingredients to complete our gin’s secret recipe.

Collective Arts Lavender and Juniper Gin

Sipped neat or with ice the Lavender & Juniper gin is a beautiful deep blue; add a splash of acid such as tonic or lemon and it changes to bright pink. Heather, lavender and camomile add to the magic by playing off the citrusy bergamot and sweet almond, finishing surprisingly dry on the palate.
