Appalachian Gap Drumlin Whiskey

Origin

Our Drumlin Rye is the perfect expression of the terroir of our warm and fertile valley. Every bit of rye in the spirit is grown within 25 miles of the distillery, and we use rye and only rye to create a rich, peppery, complex spirit.

Notes

Production: We start with a mash of 100% rye — no barley, no other grains — which we know is a little extra work but results in a stronger, more vibrant flavor. Double-distilled, it is then aged in new American oak barrels for at least three years. We make just a dozen barrels a year.

Nose: Citrus, raisins, caramel, spice, and a hint of vanilla.

Palate: Hints of toffee, notes of dark fruit, stone fruit, pepper, rye bread, spices, and cinnamon. Quite a bit of heat from the high proof, but it is a clean heat. The finish is fruity and earthy with a hint of smoke and a lingering and smooth finish.
